What does 20–22% cocoa butter mean?
Our powder contains 20–22% cocoa butter for a more intense chocolate flavor and more consistent results when baking.
What is alkalized cocoa powder (Dutch process)?
Alkalized cocoa powder — also known as Dutch-process cocoa — is treated with natural salts after fermentation. This softens the cocoa's acidity, creating a more intense, rounder chocolate flavor, a darker color, and better solubility in milk and water. Surfstr is a premium alkalized cocoa powder with 20–22% cocoa butter, no added sugar.
What is the difference between alkalized and natural cocoa?
Natural cocoa is more acidic and lighter in color; alkalized (Dutch-process) cocoa is milder, darker, and dissolves better. Thanks to fermentation and alkalization, Surfstr also goes further: about 10g per cup is enough, where standard cocoa needs around 15g.
Is Surfstr really sugar-free?
Surfstr is 100% pure cocoa powder with no added sugar, no sweeteners, and no flavorings. It contains only the sugar naturally present in cocoa.
Where does the cacao come from?
From West Africa, Rainforest Alliance certified. Sun-dried and traditionally fermented in banana leaves.
How much do I need per cup?
